Carla Makes Baked Eggs in Tomato | From the Test Kitchen | Bon Appétit

  • Join Carla Music in the Bon Appétit Test Kitchen as she makes baked eggs in tomato. The trick is getting the eggs cooked so that the whites are set and the yolks are still jammy-starting with room temperature eggs is key, so soak them in hot water for a few minutes if they're cold from the fridge.

    They mic'd the producer/director/camera man in this, and OH GOD does it make it HORRIBLE. Just shut up. I get it, others have done this cute, behind the camera person is a personality on the show kind of thing, but no, not here, not to my Carla.
    PS: Maybe we can get some production peeps, like editors, that actually like food? Seems they're constantly trying to me everything. And that's fine in some contexts! Other shows do that well! But it doesn't work with cooking, it doesn't work when you're trying to learn.

    i tried this it was rlly good but i cooked the eggs dor about 3 mins and they were still over done so id say do about 2 minutes depending on heat.

    In Iran we do a dish similar to this but it's more akin to an omelette and we cook it with saffron as well. It's so good, and this looks good too.

    I made a variation of this recipe as huevos rancheros with chile peppers, hatch chili powder, onion, green onions, tomatoes, and parsley (didn't have cilantro). And then I added some black beans cause I like black beans (sue me), and added the eggs the same way and served over toasted tortilla. It's amazing. Highly recommend trying this out if you want more spice.
