  • We challenged chefs of three different levels - an amateur, a home cook and a professional chef - to make their versions of steak. And then we brought in a food scientist to review their work. Which steak was the best?

    They are all over complicating a simple dish. All you need is a bone in ribeye, some salt and pepper, and maybe a bit of garlic butter. Grill to medium rare and some asparagus and potatoes on the side and your done. That’s it.

    Steak 1 and 3 are comparable. Frankly steak 1 cook and plate are 2 grades higher. Using an immersion circulator then slathering it with béarnaise is ridiculous. If you’re going to use a sauce like that at least use a larger plate, offset the service setting give people the opportunity to miss the mess of a sauce. Even au poivre goes on the bottom now steak on top. Hard thumbs down to steak 3. Rad thumbs up for steak 1!
