    Today... the only one in this world...
    I made a mysterious and beautiful fruit jelly cake.
    How brilliant...
    It was like a mysterious glass bead that seemed to grant all wishes.
    Its beauty is difficult to capture in photos or videos.
    I really want to show it to everyone.
    The fruit jelly cheesecake I made this time is a blend of cheesecake balls in 4 flavors and fresh fruit.
    I have blueberries, raspberries, kiwis, and mangos at home, so I used them.
    If you use the puree you have freely, you can make a delicious fruit cheesecake.
    I ate the leftover cheesecake balls like ice cream.
    It was delicious on its own.

    ● Cup measure standard
    237 ml = 1 cup
    15ml = 1Tbsp
    5ml = 1tsp
    1 egg (without shell) 53 g
    Heavy Cream (38% milk fat)
    (Chocolate is minced, flour is before sieving)
    ● Cake finished size ( 8cm diameter sphere * 5 pieces )
    ● 4 flavors! fruit cheesecake
    (Mold size: 25mm, spherical shape, 26 pieces)
    260g cream cheese ( 1 cup +3Tbsp )
    35g sugar ( 3Tbsp )
    1/2 tbsp lemon juice
    5 g powdered gelatin ( 1 tsp+1/2 tsp )
    25g water (1Tbsp +2tsp)
    135g heavy cream (60% whipped) ( 1/2 cup + 1Tbsp - before whipping )
    35g Blueberry Puree (2Tbsp+1tsp)
    35g Raspberry puree (2Tbsp+1tsp)
    35g Kiwi Puree (2Tbsp+1tsp)
    35g mango puree (2Tbsp+1tsp)
    ● Transparent Lemon Jelly
    48g powdered gelatin ( 6Tbsp )
    240 g water (1 cup)
    480g hot water ( 2 cups + 1 tsp )
    190g sugar (1 cup)
    30g lemon juice ( 2 Tbsp )
    ● fruit
    Strawberry, Kiwi, Mango, Orange confit , Raspberry, Blueberry

    I've actually tried this recipe. Steps were really easy to follow and I managed to create this beautiful dessert. It's perfect as a tea time snack as it's so light and refreshing. The small balls of cheesecake were not too sweet which is great and pairs well with the gelatine and fruits:) Overall, absolutely loved it!

      Same. Maybe try to make our buy realistic looking fake fruits and get a mold and resin to make the ball and keep it. But agreed the ball is so beautiful. I'm sure it tastes good but I'd feel kinda bad to eat it cuz then you don't have it anymore 🥺 but this is true art and it's beautiful ❣

      @nicole nemeth I haven't checked if UV resin has the same effect, but you might want to search for what happens to something like a raw egg or ice in AB resin. Egg cooks & ice melts because heat is generated during the curing process, so I can just imagine that fruit would start to rot as well...

    After trying to recreate this recipe, i admire how skillful you're with jelly. The ball could be cloudy, break it shape, leak etc. And u managed to make it this freaking beautiful. 3 times messing this up already and eat a bunch of broken balls 🤣 but im confident i will succeed. How do u make such crystal clear jelly? Mine is cloudy and the balls are not very round when i take it out of the molds

      @Sue Sue i think it's important to let the jelly powder bloom for at least 20 min with the exact water:jelly powder ratio. For the temperature I just put normal water into boiling water until I reach the 60 cel degree (with a thermometer). Let the sugar and soaked gelatin dissolve FIRST and then the lemon juice . I got a beautiful color this way

    It's amazing how different your cheesecakes are compared to the west. I bought a yuzu Japanese cheesecake today... I have 6 children under 12yo. The only one in the house who could eat it was my 2yo daughter!! Tasted like cottage cheese compressed with a key lime flavor!! I was appalled. Everyone said please don't buy cheesecake again, just make your real cheesecake "new York style". No bakes are good too with whipped cream. This was not great. Lol...

    Thanks for the great idea. I don't know if I'll ever go to the time trouble and effort of encasing them in gelatin, but I'm in love with your fruity cheesecake balls. A few of them, topped with fresh fruit makes a pretty and relatively healthy dessert.
